Banana Lime Mousse

This is an old family favourite - from Auntie Nell! A mouth watering desert for summer days 


Banana Lime Mousse

 

Ingredients:

 

4 large bananas

Juice half a lemon

1/4 pint double cream of your choice - I use Goats but dairy free you can whip would be fine

1/4 pint thick natural yoghurt ( cow, goat, sheep or dairy free)

One lime jelly

1/2 pint water

 

Method:

 

  1. Melt jelly in 1/4 pint hot water (I give a turn in the microwave so it doesn't boil)

  2. Add other 1/4 pint cold water

  3. Pour a little of the jelly into a flat dish and leave to set (it will be used for decoration)

  4. Leave the rest of jelly until beginning to set (I put in freezer for about twenty minutes)

  5. Mash three bananas together with the lemon juice in a bowl and set aside

  6. Whip cream until thick

  7. Fold in the yoghurt

  8. Whip into the jelly which is beginning to set then fold into the cream and yoghurt mix

  9. Then fold in the mashed banana into the cream, yogurt and jelly mix

  10. Pour into a serving dish

  11. Decorate with slices of the remaining banana and broken up reserved jelly


BE CAREFUL THIS IS SO GORGEOUS YOU WILL HAVE TO USE A LOT OF WILL POWER TO ONLY HAVE ONE PORTION!!!!
