Had some gorgeous healthy blueberry muffins for elevenses, based on a recipe from //www.talesfromthekitchenshed.com .
I adapted it a bit to make it cow dairy and gluten free. But still yummy.
I used:
Sheep's yogurt and almond milk to make the buttermilk
Sheep's feta instead of ricotta
Gluten free self raising flour plus
50g of ground almonds instead of wholemeal flour
1 tsp xanthan gum
