Courgette and Bacon Tagliatelle

Serves 4 as a side dish

 

Ingredients

 

8oz tagliatelle (I used fresh)

6 cigar sized courgettes

6 courgette flowers petals pulled off and then roughly torn into fairly large pieces - see image above

4oz frozen peas - cooked

4 slices unsmoked bacon

1 tbs olive oil

1 tbs chopped chives (I used a mix of garlic and onion chives)

Pinch celery salt

Black pepper

  

Method


  1. Remove the petals from the courgette flowers, wipe them carefully and cut into thin strips

  2. Thinly slice the courgettes

  3. Cut the bacon into bite sized pieces

  4. Cook the tagliatelle according to instructions on the packet

  5. While the tagliatelle is cooking heat the olive oil in a large frying pan

  6. Add the bacon bits and cook for about 2 mins

  7. Add the courgettes, peas and chives, saute for a further 2 mins

  8. Season and leave on one side to keep warm while you drain the cooked tagliatelle

  9. Mix the courgette flowers into the courgettes and warm through – no more then a minute

  10. Toss the mixture into the tagliatelle. Serve immediately.
