Serves 4
Ingredients
½ cucumber – end chopped off and scored down sides with a fork
6 tbs white wine vinegar
1 tsp chopped fresh mint
1 dsp mint flowers
Ground black pepper
Method
Slice the cucumber finely
Place in an appropriately sized shallow dish
Pour over the white wine vinegar
Put the chopped mint over the top and mix in
Add pepper to taste
Sprinkle the mint flowers over the top
Leave to marinade in the fridge for an hour or so – over night if you want a lovely ‘pickled’ flavour
