This is a really delicious and very fast to make recipe. To make it even quicker I use ready chopped frozen onion. Another little trick is to buy ready pulled ham. Serve with crispy rolls and your choice of spread. The picture shows my Nasturtium and Viola Flower Goat's Butter. Tasty at any time - but brilliant for a Halloween supper.
Serves 2
Ingredients
I dsp olive oil
1 garlic clove - crushed
1 small onion - chopped
7oz frozen peas
A couple of slices of ham cut into small pieces or a handful of pulled ham
10 fluid oz chicken stock
2 fluid oz homemade evaporated soya milk or cream
black pepper
Method
In a medium sized saucepan heat the oil and saute the onions and garlic until turning golden round the edges
Add the stock and bring to the boil
Pour in the peas, bring back to the boil and simmer for ten minutes
Take off the heat and whizz it with a hand blender until smooth
Stir in the ham and milk or cream
Heat through and season to your taste with freshly ground pepper
